Clay ovens - how to build one
This is a very practical, hands-on, one-day course on how to build your own clay oven for baking pizzas, bread, etc. Jon Dyvig (click on his name above to see more about him) will give you the confidence to go and and find the clay and then construct the oven quite quickly using bricks and half-bricks, or whatever you have to hand.
The day starts by digging the clay from our own pit and barrowing it over to a concrete hardstanding. Then Jon will show you how to light the fire in a clay oven that Bob built some years ago, so that it is really hot in time for lunch. Working together as a group, you will construct a base, using old bricks, and gradually build the whole oven, finishing by plastering it thickly with the clay that you have puddled earlier. In between, there are many tips to be had, so don't forget the notebook, or video equipment.
At lunch time, Jon will show you how to form the pizza dough (made two days beforehand) and Bob will cook it on his clay oven round the side of the house, for you to decorate with parma ham, chorizo, peppers, mushrooms, etc.
Jon will tell you how to find suitable clay wherever you live, but you are welcome to dig and take away some from our pit in your car (plastic sheeting needed of course).
